The zero waste restaurant, Silo, in Brighton will relocate to Hackney this summer.
McMaster’s projects recycle all of its glass back into sand and that way they make crockery for the restaurant.
The current Silo in Brighton offers a tasting menu, a small menu of snacks, lunch, and brunch. They originally divided their menus into plant-based and omnivorous progressions but has been made into one menu. For example, they offer mackerel tartare with purple daikon and miso, pumpkin seed ice cream with a fig leaf and furikake. Brighton citizens criticize the restaurant because they think Brighton doesn’t need such a forward-thinking restaurant.
Silo opened back in 2014, they won Observer Food Monthly’s ‘’Best Ethical Restaurant’’ in 2016.
The opening will be this summer – July.
