  1. Down go the floor sheets, the worktops on each side get covered, and the cooker is switched off at the wall, left to cool fully if it has been running.
  2. Out comes anything that lifts free: the shelves, the trays, the side runners, the fan guard, and the inner pane of the door. That trapped brown film between the door panes is exactly why a cooker can look filthy after somebody claims to have cleaned it, so splitting the door is never optional for us.
  3. Those loose pieces go straight into the tank in the van, warmed to roughly 60C and filled with a water-based degreaser that has no caustic in it. Half an hour or so and the carbon lifts, the baked grease lets go, the sticky brown glaze peels off the roasting tin, and the chalk scale that welds itself to Watford trays comes away with it.
  4. Their soaking time is when the cavity gets done by hand. An enzyme degreaser goes on the roof, the back, the floor and the side walls and is left to sit, so the product does the hard graft rather than my elbow. After that it is soft pads, slim brushes worked into the seal groove and around the element, then a microfibre wipe-down. The fan earns the extra minutes, because a clogged fan is what wears a cooker out.
  5. Everything that came out is rinsed, dried and put back where it belongs. Glass done front and back, gasket wiped along its length, runners clipped home, the lot returned just as we found it.
  6. Last comes the test. We fire it up, watch the fan spin, and hand it back fit to roast in.

Nobody pretends this is pretty work. It is. The tank is a warm, water-based solution kept well below the heat that would warp metal or lift a coating, and the cavity products are enzyme-based and safe on enamel. Nearly every ruined oven we meet was wrecked slowly by caustic sprays stripping the enamel, or by wire pads scratching the glass. We use neither.
