What an oven clean involves

The door comes off and, where the model allows it, the glass comes out of the door, because the grease you can never reach lives between the panes. Racks, trays and side runners go into a heated soak while the cavity is cleaned. Inside the oven itself we use non-caustic products, so no chemical smell gets baked into your next three dinners and nothing harsh is left where food goes.

Burnt carbon gets scraped and dissolved back to the enamel, the fan cover comes off so the fan can be degreased, the seals are cleaned around rather than soaked, and the whole thing goes back together and gets test-run. You can cook in it the same evening. Most people say the first heat-up feels wrong, because nothing smokes.

We’re straight about what cleaning can’t do. Enamel that has flaked or worn stays worn, and a clean shows honest wear more clearly, not less. A failed door seal or a dead element is a repair job; we point it out rather than polish around it and let the Sunday roast find out for you.

Wembley kitchens, from tower flats to family semis

The kitchens around the stadium are mostly new and mostly open-plan. Thousands of rental flats have gone up at Wembley Park over the past decade, and nearly all of them run a compact electric fan oven and a ceramic or induction hob in the same room as the sofa. That layout has one flaw: there’s no kitchen door to shut. When the oven starts smoking the whole flat knows about it, and by the second alarm most tenants have stopped using the oven and moved their lives onto the hob and the air fryer. In a kitchen you meet that as limescale: the white crust where a pan boiled over and dried onto the hob, the film inside the kettle, the cloudy ring a steam oven grows when its reservoir never gets rinsed.

On a ceramic or induction hob the scale bonds with burnt sugar and fat into a ring that a sponge won’t move and a knife will scratch trying.
