How we actually clean an oven
The work happens outside the oven, not inside it. We pull out the racks, the side runners, the fan cover and the inner door glass, and they go into a heated dip tank in the van where the fat softens and lifts off in the solution rather than being scraped at your worktop. The cavity itself we clean by hand with a product that cuts baked-on grease without the caustic fumes that fill a small flat, then we rebuild the oven and run it to check the fan and the element still behave.
The point of taking it apart is the glass. Grease bakes on between the two panes of a double-glazed oven door, and no amount of spraying the inside gets at it. Split the door, clean both faces, and the glass goes clear again, which is the difference people actually notice when they open the oven the next evening.

We are honest about the limits. A cracked oven-door seal or a heating element on its way out is a repair, not a clean, and we will point it out rather than pretend a scrub fixed it. Deep pitting and burnt-in scorch marks on old enamel will lift as far as they lift; the oven comes up clean, not brand new.
Compact rental kitchens and integrated ovens
Space is the whole story in a Paddington kitchen. When a four-storey stucco house on Westbourne Terrace was split into flats, the kitchen often ended up wedged into what was once a box room or a section of a landing, and the cooker sits inches from a cupboard on each side. The new waterside flats are tidier but no roomier: a galley kitchen in a Merchant Square tower packs a lot into a short run of units. Either way there is barely room to swing the oven door, let alone spray caustic cleaner about.

That is exactly why the dip-tank method suits these flats. The mess leaves the building in the van. We are not filling a windowless galley with fumes or splashing cleaner across a worktop that is thirty centimetres from the hob. You get the smell of nothing much, rather than a flat you have to air out for the rest of the evening.
Integrated ovens are the other Paddington quirk. In the smarter conversions and most of the new-builds the oven is built into a run of matching units with a cabinet door front, and it has to be eased out on its runners to reach the sides and the back. Steam ovens, grease and mineral scale
London water is hard, and Paddington gets the same central supply as everywhere else, somewhere around 278 milligrams of calcium carbonate per litre. That does not touch a normal fan oven, but it matters the moment there is water involved. Combination steam ovens, the sort that have crept into the newer Paddington Basin kitchens, scale up inside their water tank and their steam channels, and the deposit bakes into a chalky crust that a wipe will not shift.
