Why hot-water extraction, not a quick shampoo
Hot-water extraction is the method that actually rinses. The machine pushes heated water and a measured amount of detergent down into the pile, agitates the dirt loose, then pulls almost all of it straight back out under suction. The carpet is damp afterwards, not soaked, and it dries in a few hours with the windows cracked.
The old bonnet-and-shampoo approach is different. It works detergent into the surface and leaves most of it there to dry. In a soft-water town you might get away with that. In Sevenoaks you do not, because the leftover detergent grabs onto the dissolved chalk and the two of them set into a stiff, sticky film near the tips of the fibres.
