How the dip-tank clean actually works
The bit that makes the difference is the dip-tank, and it lives in the van.
When the engineer arrives, the oven gets switched off and left to go cold if it has been on. Then the removable parts come out: the shelves, the side racks, the fan guard at the back of the cavity, the base plate where one exists, and the trays. All of that goes into a heated tank of non-caustic solution in the van, where it soaks while the rest of the work happens. Soaking is what lifts carbon off the bars of a rack, which is the part you can never scrub clean by hand at the sink.
Non-caustic matters for two reasons. The first is your kitchen. Caustic soda fumes are unpleasant in a small Charlotteville cottage kitchen with one window, and they linger. The second is the same-day point: because we are not using a harsh caustic that needs hours to gas off, you can cook in the oven the evening of the clean. No airing it out overnight, no faint chemical taste in the first thing you roast.
While the parts soak, the cavity is cleaned by hand. The roof, the back, the floor, the door seal, and the inside of the door glass, which on a lot of ovens is a double or triple pane that comes apart so we can reach the brown haze trapped between the layers. That trapped layer is the thing that makes an oven look permanently dirty even after you have wiped the inside, and getting between the panes is most of why the glass comes back clear. Then the parts come out of the tank, get rinsed and dried, go back in, and the oven is wiped down, reassembled and tested.
