How the dip-tank clean actually works
The thing that makes the difference is the dip-tank, and it lives in the van.
When the cleaner arrives, the oven is switched off and left to go cold if it has been on. Then everything removable comes out. The shelves, the side racks, the fan guard at the back of the cavity, the base plate where there is one, and the trays. All of it goes into a heated tank of non-caustic solution in the van and soaks there while the rest of the work carries on. Soaking is what floats carbon off the bars of a rack, and that is the exact part you can never get clean by hand at the sink, no matter how long you stand there.
Non-caustic matters for two reasons. The first is your home. Caustic soda fumes are grim in a small kitchen with one window, and they hang around for hours. The second is the same-day promise. Because we are not relying on a harsh caustic that needs time to gas off, you can cook in the oven the evening of the clean. No leaving it open overnight, no faint chemical edge on the first thing you roast.
While the parts soak, the cavity gets cleaned by hand. The roof, the back, the floor, the door seal, and the inside of the door glass, which on a lot of ovens is a double or triple pane that comes apart so we can reach the brown haze trapped between the layers. That trapped layer is the reason an oven can look permanently dirty even after you have wiped the inside, so reaching between the panes is most of why the glass comes back clear. Then the parts come out of the tank, get rinsed and dried, go back where they belong, and the whole oven is wiped down, put back together and tested before we leave.
