The ovens Stratford actually has

Stratford kitchens sort themselves by decade. In East Village and the towers around Westfield and Stratford International, developers fitted the same setup over and over: a built-in electric single, an induction or ceramic hob and an extractor above. Those kitchens sit inside the living space, which means every burnt tray perfumes the whole flat and the smoke alarm has opinions. Most of the hoods recirculate through a filter rather than venting out, so they load up with grease faster than anyone expects.

The terraces off Leytonstone Road and through Maryland and West Ham are a different museum. Freestanding cookers with grill compartments. Gas hobs whose burner crowns have not been lifted this tenancy. Sturdy old doubles that have outlived several tenants. Then there are the flatshare kitchens, and they work hardest of all. Four sharers cooking in shifts pushes four dinners a night through one oven, and cleaning it is nobody’s job in particular, so it becomes nobody’s job at all. It usually gets sorted when someone moves out, or when the grill starts setting the alarm off. Either way, that is the day our phone rings.

How the clean works

Everything removable comes out. Racks, trays, side runners, the fan cover and the inner door glass where the design allows, all of it goes to the van and into a heated tank of water-based degreaser at around 60 degrees, where the baked-on grease loosens while we work on the shell.

Inside the oven we use non-caustic, enzyme-based products, so there are no fumes drifting through the flat and no need to banish anyone for the afternoon. Carbon comes off the roof and walls, the door is cleaned on both sides of both panes, seals and hinges are degreased, and then the whole thing goes back together and gets tested. Hobs get their own attention, and in Stratford that includes limescale, because Thames Water here is properly hard, somewhere around 290 to 300 ppm, and every boil-over bakes a thin white ring onto the glass or the steel. It comes off. It just needs the right product rather than more scrubbing.

Ninety minutes is the honest average for a single oven that has not been cleaned in a year. Doubles and ranges take longer because there is more metal to strip and more glass to split.

One cleaner comes, carrying everything the job needs. The oven has to be cold, so do not run it that morning, and an AGA needs switching off the night before. We lay floor covering from the front door to the kitchen, work for the times listed above, and take the mess away in the van rather than filling your bin with it.

Access is rarely a problem here. In the concierge buildings, East Village, the High Street towers and the rest, we sign in at the desk like any contractor, and plenty of customers simply leave the arrangement with the front desk and go to work. On the terraced streets we sort the permit or the meter in advance, so parking never appears on your bill as a surprise.

Yes, immediately. We use non-caustic, water-based products, so there is nothing to burn off and no fumes to wait out. Cook that same evening. If anything the oven runs better, because the fan and the elements are no longer coated in old grease.

Do you clean between the door glass panels?

Where the oven’s design lets the door come apart, yes, and most do. The brown fog on an oven door usually lives between the panes, which is why kitchen sprays never shift it. Dismantling the door is routine for us and it goes back together properly, seals and all.
