What the dip-tank clean involves

Everything that unclips comes out: racks, trays, side runners, the fan cover and the inner door glass. Those parts soak in a heated tank of non-caustic degreaser in the van, which does in an hour what oven spray pretends to do overnight. While the tank works, the technician goes at the cavity by hand with enzyme-based products, lifting burnt carbon off the roof, the walls and the fan housing.

The products are water-based, fume-free and biodegradable. No caustic fog, nothing to air out, no waiting period: you can cook that evening. And the brown fog trapped between the door panes goes for good, because the inner glass actually comes out rather than being wiped around.
